Based in the Washington, D.C. area, Chef James brings together the artistry of a classically trained private chef, the insight of a board-certified health and wellness coach, and the lived experience of someone who understands what it means to lose your rhythm — and rebuild it with intention.

Food Has Always Meant More Than Food
For Chef James, food has always been tied to comfort, memory, and connection.
Some of his earliest memories are of being in the kitchen with his grandmother, helping her prepare simple meals that felt like love. He remembers coming home from school and sports practice to the familiar comfort of his mother’s cooking — Mexican rice, beans, fresh tortillas, and meals that brought the family together at the end of the day.
Weekends often centered around cookouts and family gatherings, where food became the gravitational force that pulled everyone into the same space. Long before he became a chef, James understood that a meal could do more than satisfy hunger. It could create belonging. It could restore energy. It could remind someone who they are and where they come from.
That foundation still shapes the way he cooks today.
A Global Perspective, Rooted in Home
Chef James’ culinary identity is deeply connected to Mexican cuisine, especially the regional flavors of Southern California and Baja California. The vibrant food culture of San Diego, Tijuana, Rosarito Beach, Ensenada, and Puerto Nuevo helped shape his palate and his appreciation for fresh ingredients, bold flavors, seafood, color, and simplicity presented with care.
After joining the military and moving overseas, food took on an even deeper meaning. Living away from home made him miss the flavors he grew up with, but it also opened his eyes to the way food connects people across cultures. A simple soup in France could remind him of something his mother made. A dish experienced abroad could carry the same warmth, technique, or emotional weight as something familiar from home.
Through years of travel across Europe, Asia, Australia, New Zealand, and the Pacific, Chef James developed a style that is global, creative, and deeply personal. His food often draws from Mexican, Hawaiian Pacific, Japanese, Chinese, and coastal influences, with a particular love for fresh seafood, vibrant produce, and dishes that feel both refined and full of life.
Culinary school gave him the structure to refine that creativity. Training in classical technique taught him precision, organization, discipline, and how to manage the pace and complexity of a professional kitchen. Rather than replacing his cultural foundation, that training gave him the tools to elevate it.
Today, Chef James’ food is colorful, thoughtful, and expressive. It may be elegant, comforting, adventurous, performance-focused, nostalgic, or restorative depending on the client and the moment. At its core, it is always personal.

Chef James believes healthy eating does not have to feel restrictive, generic, or uninspired.
To him, elevated healthy eating means preparing simple meals with an artist’s touch. It means using quality ingredients, building flavor with intention, and creating food that supports a client’s goals without stripping away enjoyment, culture, or comfort.
His approach is especially shaped by the belief that modern Mexican cuisine deserves to be seen in its full depth. It extends far beyond tacos, burritos, and fajitas. It is regional, layered, historic, colorful, and influenced by cultures across the world. Chef James brings that same sense of depth to every menu he creates.
The result is food that feels refined without being cold, healthy without being clinical, and personal without being overly complicated.
Wellness, Without Judgment
Chef James’ path into wellness coaching began long before he earned credentials.
A lifelong athlete, he grew up understanding the role of discipline, training, and physical performance. Fitness was part of his identity from an early age, and his interest in exercise science, sports nutrition, and human performance eventually led him to earn advanced education in physical education and exercise science, become a certified personal trainer, and become a National Board-Certified Health & Wellness Coach.
But his coaching philosophy is also shaped by personal experience.
There was a period in his life when his own nutrition and fitness slipped out of alignment. His weight climbed to 260 pounds. His blood pressure and cholesterol became serious concerns. Medication became part of the conversation. Like many people, he knew what he “should” be doing, but knowing was not the same as having the structure, habits, and support to do it consistently.
Eventually, he made the decision to practice what he believed. He changed the way he ate, became more physically active, rebuilt his daily systems, and lost 80 pounds. More importantly, he reclaimed his health, his confidence, and his sense of control.
That experience changed the way he works with clients.
Chef James understands the embarrassment, frustration, fear, discouragement, and self-doubt that can come with feeling disconnected from your health. He also understands that shame is not a strategy. Judgment does not create lasting change. Support does.
His coaching is based on guidance, not prescription. He meets clients where they are, helps them identify the barriers in their daily lives, and works with them to create realistic systems that support long-term change.
He does not believe in temporary diets. He believes in lifestyle change.

Many meal prep companies offer standard menus for the masses. Chef James offers something more personal.
Every client has a story. Every client has preferences, routines, goals, family needs, emotional connections to food, and health considerations that deserve to be understood.
